Will Richmond really likes tacos – and he has the clothes to prove it

For those of you who don’t know Will Richmond, he’s the guy at Dos Amigos who whips up your delicious tacos every Tuesday while sporting what we like to consider the only uniform a taco designer should ever wear. But we’ve always wanted to know more about this taco whiz, so we asked him to sit down for a quick interview and here’s what he had to say.

How many tacos can you make in an hour? How many would you guess is the most you’ve made in a day?

In an hour, by myself, if they’re not too crazy complicated I could do at least five in a minute so times 60 that’s about 300 in an hour. In a day, and I’ve worked plenty of doubles on Taco Tuesday, which is the day to make tacos, I’ve never thought about the statistics like that, but I’ve probably easily done a thousand in a day.

What’s the weirdest taco order you remember taking?

Probably from Taco Dan, one of our most regular regulars, this is one he’s done recently – in addition to the four other tacos he got – he got an Alvarado taco, which is our Alvarado salad, but made as a taco. So it would be like avocado, red pepper, jicama slaw, corn salsa, black beans, lettuce and cilantro lime dressing.

What is your go-to taco order at Dos?

Pork taco or barbecue chicken. Whatever I’m in the mood for. For like a year it was a pork buraco. The buraco is two tacos rolled up as a burrito. It’s just easier to eat that way. I do pork with lettuce, awesome sauce, crushed up chips, cheese and a little green Tabasco.

Where did you get the awesome taco uniform?

It’s not so much a uniform, it came in two parts. I bought the shirt in Urban Outfitters in Boston. I found it in the very back of the store. Nobody wanted it. It was this ugly blue taco shirt and it was 10 bucks and I was like ‘yeah I’m going to get this.’ I think I already had the socks. Well I have two pairs. My first pair of taco socks were from my old boss, Alyssa. She just gave them to me one day cause she’s awesome like that. Another pair, during the holiday season we have stockings hung up, and some of our regulars came in and they had found some taco socks at Target and they put them in my stocking. So I switch it up every week.

What are you usually doing when you’re not at work?

I’m at work. I am here a lot. I just love hanging out here, but when I’m actually not here I spend a lot of time skateboarding, snowboarding in the winter. I’m a recovered alcoholic/drug addict, so I spend a lot of my time at AA meetings and with other AA members. I’ve been sober, it will be three years in November, so that’s a big part of my life. I’m doing pretty well today, but I try to stay active in the AA community. This summer I spent a lot of my time swimming, just hanging out, going to the beach at night. I went to the beach way more at night than I did during the day. . . And I just got a girlfriend so I’ve been spending a lot of time with her.

Graduated college and teaching.

Describe your perfect day off:

Sleeping in, spend some time skateboarding with my friends, go to Daisy Beach, jump off the rope swing and spend the evening with my girlfriend. That would probably be the perfect day today.

What was the last book you read?

Slaughterhouse Five by Kurt Vonnegut.

If they made a movie about your life, who would you want to play you?

Hahaha, umm . . . Bill Murray.

What’s one thing Concord doesn’t have that it should?

That’s a good question. Aside from more parking, I kind of love Concord. I’d say nothing aside from more parking.

Are you disappointed you weren’t nominated for the Hunks of Concord issue?

I wasn’t nominated? I didn’t know that.
